Spicy Roast Veg & Haloumi Pittas
Ingredients
We've even used Feta instead of haloumi and it was just as delicious!
1 red onion
1 courgette
Couple handfuls of mushrooms
1 red pepper
1 large tomato
1 aubergine
3 cloves of garlic
Block of haloumi
4 Pitta Breads, toasted and split
Good drizzle of Smoked Chilli Dressing, or your favourite bread dipper (we like to use our Chilli based ones or the Smoked Garlic with Black Peppercorn one)
Method
Prep and chop your veg into decent chunks and slice your haloumi thickly. Pop into a roasting dish, drizzle over your dressings / bread dipper oil, and roast in a hot oven for 25 mins, and then cram into toasted pittas.
